Music played by some WONY DJs who, unfortunately, will not be back, plus Jackie Scalzo Live from Utica (via Northampton). Here is the recipe that she gave on the air:

Utica Greens

2 heads escarole
5 hot cherry peppers
1 cup grated Parmesan cheese
6 slices proscuitto
3/4 cup Italian bread crumbs
3 cloves garlic
some olive oil
some mozzarella cheese
some diced tomatoes

Steam the escarole until tender. Dice it up. Fill bottom of pan with olive oil and saute garlic. Don't burn the garlic. Add the greens and mix it up. Chop up hot peppers and proscuitto and mix them in along atih the Parmesan chees and bread crumbs. Mix in some grated mozzarella and a cup or so of diced tomatoes. Put it all in a baking pan and sprinkle some Parmesan and mozzarella on top. Bake at 350 degrees for about 40-45 minutes.
